Description

Dedicated to the founder of the company, it is the product of the Dal Cero brothers' great passion for the classic method. The Durella grape is very acidic and needs long ageing to be "tamed", hence the long ageing on the lees of Augusto, a classic method sparkling wine with a fine, long and persistent bubble.

Vinification

Whole-cluster pressing into separate lots of must, followed by controlled-temperature fermentation in oak ovals.
Maturation

Maturation take place in oak. In the following spring, the final cuvée is assembled, which includes a small amount of older reserve wine. The cuvée is bottled and undergoes secondary fermentation and ageing in the bottle over a minimum of 50 months. Following disgorgement, the wine ages a further six months or so.

Crisp and minerally, intriguing and distinctive. Every sip reveals new pleasures.
